Chicken Enchilada Recipes

When it’s hot outside, sometimes the best recipes are those that are quick and tasty. Nothing satisfies hunger quite like great chicken enchilada recipes, though they can be hard to find.

Basic chicken enchilada recipes are quite simple. Most of these dishes use the same basic ingredients combined a slow simmer in order to produce an excellent filling. However, some chefs have taken this simple concept to another level by adding various foreign ingredients. If you happen to be a home chef that likes to play around with food, go ahead and add your own spices and herb blends. Sometimes, the best recipes come from mere experimentation.


In order to make this dish, you will need to make or purchase twelve tortillas. You will also need one can of tomatoes; a few hot chilies (to taste), sugar, one chopped onion, and two cloves of garlic. To make, simply heat a bit of olive oil in a skillet, add chopped onion and garlic, and then add chopped cooked chicken, tomatoes, and sugar to taste. Let this mixture simmer for up to twenty minutes prior to adding chopped chilies. Once the mixture has cooked down enough to ladle, scoop some into a few tortilla wrappings, roll them up, and munch away.

If you don’t like the sweet flavor of this recipe, go ahead and leave the sugar out of it. Or, you can add honey instead. Some people find that adding a bit of cheese to the tortilla is also a good idea, but that is up to you. These chicken enchilada recipes make a great weeknight meal, or a great Saturday night meal. Kids will love them, your friends will love them, and you will enjoy eating a low fat, low calorie, meal that took very little time to prepare. Serve this dish with a side of rice and a bit of guacamole for a truly authentic evening.
