Chicken Marsala Recipe

The truth about a great chicken Marsala recipe is that this dish cannot exist without top quality wine. In every manner, the wine contained in this dish makes the entire thing happen.

While you can certainly find cheap Marsala wines out there, don’t purchase an inexpensive bottle. Many people make the mistake of buying cheap “cooking wines,” though they don’t realize that every ingredient poured into a dish will make or break it. This type of wine is made in and around Sicily, Italy, and it has a taste that is similar to port. In fact, if you don’t have this type of wine on hand, a nice port will do the trick. Once you have purchase a good quality wine, you will find that any chicken Marsala recipe is really a snap.


Other than the wine, the other trick to creating a great dish is to be sure that all of your chicken pieces are the same size. To do this, pound the pieces flat until they all look the same, and then proceed with your recipe. Next, coat all pieces in a mixture of flour, salt, and pepper, and then brown them in a hot pan containing butter and olive oil. Once the chicken is cooked, remove the meat and add one cup of mushrooms and one cup of onions to the pan. Sauté the mushrooms and onions, then add water, one cup of chicken stock, ½ cup of wine, and spices of your choice to the mix. When this has reduced to a nice sauce, add the chicken back into the pan and cook thoroughly.

This is a basic chicken Marsala recipe that can be used as a base for more complex ingredients. The best way to create the ultimate dish is to play around with the many things that can be added. Some people mix interesting spices into this dish, while others create cream sauces by removing the olive oil and adding more butter to the sauce. Really, you can come up with anything you like as long as you keep the proportions the same.
