Chicken Pot Pie Recipes

If you have a few great chicken pot pie recipes under your belt, you will never struggle to come up with a fantastic weeknight meal again.

All of the best chicken pot pie recipes begin with a flaky crust that can’t be beat. There are a number of ways to make a delicious pie crust, though some are better than others. If you have a pie crust recipe that you usually use to make fruit pies, this recipe can be used to make chicken pies. The only things that you must do is cut back the sugar content just a bit, and add a tad more salt to the dough. If you don’t have a good pie dough recipe already, you will find a simple one listed below.


Pie crust really only consists of a few ingredients. You will need 1 ½ cup of all-purpose flour; ½ tsp. salt; ½ cup unsalted butter; ¼ shortening; and 4 Tbsp. ice water. Mix all of the ingredients inside of a food processor or mixer until they form pliable dough. Then, roll the dough out onto a floured surface, and then place the dough into a pie pan. Now, let’s talk about that chicken. For this recipe, a large 3 ½ pound frying chicken will work best. Other ingredients that you will need are carrots, celery, onion, salt, fresh thyme, flour, milk, frozen peas, and a few potatoes.

To begin, cook the chicken in a large pot of salted water. Then add some chopped carrots, celery, onion, and salt. Cover the mixture with water just until the water reaches the top of the bird. Then, cook the mixture on medium heat for one hour. When the chicken is done, take the meat out of the pot. Keep the vegetables boiling inside of the pot while you strip the meat off the chicken. Place the meat on a dish, and then return the meat bones back to the pot with the vegetables. Next, sauté the rest of the vegetables in butter for ten minutes, and then add ½ cup of flour to the mixture. Then, add the two cups of chicken stock, and a splash of milk. Allow the mixture to simmer for ten minutes. Finally, add the meat and spice to the mixture. Most chicken pot pie recipes are made this way, and all you have to do now is fill that crust.



Fill the prepared dough with the chicken and vegetable mixture. Cover the pie with another piece of dough, make a small slit in the top of the dough, and pop it in the over for about forty minutes.

Chicken pot pie recipes make fantastic weekday meals. Once you learn how to make that stock, the rest is a piece of cake.
