Easy Curry Chicken Recipe

Coming up with an easy curry chicken recipe is not too difficult if you know a thing or two about curry itself. In fact, all great Indian meals begin with the right mixture of spices.

Did you know that curry powder does not always come in the form of a yellow spice? Curry (“karhee” or “kadhi”) refers simply to a sauce. Many years ago while the British ruled India, those that traveled back home to England wished to bottle the taste of Indian cuisine. Thus, they created a powder that was reminiscent of those finer Indian spices. Today, this concoction is what most of us are familiar with when we think of a curry. However, there are literally thousands of different curries throughout India today, and this knowledge can make all the difference in the world when it comes to your easy curry chicken recipe.

Most of the time, curries are made from a mixture of coriander, turmeric, cumin, and fenugreek. Some chefs also add ginger, garlic, fennel seed, cinnamon, clove, mustard seed, green cardamom, black cardamom, mace, nutmeg, red pepper, long pepper, and black pepper to the mix. Sometimes, chefs will add curry leaves, which can be found in South and East India. Try and mix up your own curry, for this will drastically change the taste of the food that you make. If you are going to use a store bought mix, be sure to find one that is fresh.

Now, on to that easy curry chicken recipe... Purchase one large chicken cut into chunks, or simply purchase two to three chicken breasts and cut them into chunks. You will also need one large onion cut into chunks; 2-3 cloves of garlic; ¼ cup of olive oil; two cups of chicken stock; two diced tomatoes; 3 Tbsp. of curry powder; 2 Tbsp. lemon juice. To begin making this recipe, sauté the chicken in olive oil along with the onions and garlic. Cook the chicken on medium high heat until it is almost cooked completely. Then, add the stock, tomatoes, and spice. Simmer this mixture for thirty minutes or until it is cooked properly.

Within half an hour, you will have a simple curry dish that is packed with flavor. If you like, go ahead and add one package of frozen peas to this dish. While a regular curry powder will provide a great taste, the homemade variety is really outstanding.
