Mango Chicken Recipe

You will need: ½ tsp. cumin; ½ tsp. ginger; nutmeg; one package of chicken breasts; one tablespoon of butter; one ripe mango; one red onion; salt and pepper; one fresh lime. Begin by mixing all of the spice together inside of a dish. Then, rub the spice mixture into each breast thoroughly. In a large skillet heat butter until it becomes translucent. Carefully, place chicken breasts into the pan one by one and brown each piece on all sides. Remove the chicken from the heat and place it aside for a moment. Mix mangoes and chopped onions in another small sauce pan until the mixture has reduced.

Once the mangoes and onions have reduced, let them heat for one more minute while adding a splash of lime juice. Then, cover the chicken with the mangoes; place a piece of tin foil on top of the whole dish; and place the dish in a 350 degree oven for half an hour. If you serve this mango chicken recipe with rice and steamed vegetables, it will easily become a healthy weeknight meal. As previously mentioned, other fruits that you can use in this manner include plums, peaches, pears, and even figs. The trick with this recipe is to make sure to reduce the fruit thoroughly before adding it to the chicken.
