Rinse the chicken under cold water, pat it dry with a towel, and proceed to season the bird inside and out using salt and pepper. Next, put the entire bird inside of the roasting pan with the skin pointing upwards. Pour a slight drizzle of olive oil over the top of the chicken, and rub the entire thing with the spices that you have prepared.
Bake the chicken uncovered for one and a half hours, or until you see that the skin has turned a golden brown color. Avoiding any bones, place the meat thermometer inside of the bird once you think that it is done. The thermometer should read 170 degrees. Pour the juices from the bottom of the roasting pan through a strainer. Place the juices into a small sauce pan, and then proceed to heat the juices over a low heat.
