Pesto comes from the small city of Genoa in Italy. The name actually comes from the Italian word “pesta,” which means to crush or pound something. The sauce itself is rather simple consisting of Genovese basil, salt, garlic, pine nuts, olive oil, and some type of hard cheese resembling Parmigiano Reggiano. To make the sauce, simply grind all of these ingredients together (to taste) using a mortar and pistil or a food processor.
