Pineapple Chicken Recipe

As with any other recipe, the best pineapple chicken recipes use fresh pineapple and fresh pineapple juice. While you can used canned, there is no substitute for that fresh taste.

If you do not have a juicer, you may have to resort to using canned juice for any pineapple chicken recipe. However, you can still use fresh chunks as opposed to canned chunks – fresh really does make a difference. The following recipe can be used as a good base for other dishes, or it can be used on its own if you prefer the simple taste.


Some people prefer to spice up this recipe with a number of spices and pastes, though this is up to you. You will need a one pound chicken breast cut into bite sized pieces; one tablespoon of rice vinegar; one tablespoon of ginger chopped; one can of pineapple juice; and one cup of chopped fresh pineapple. Mix chicken, vinegar, and ginger in a bowl until all pieces are coated. Then, place the bowl inside of your refrigerator overnight or for one hour. In a cast iron skillet, heat a bit of vegetable oil. Next, add the pineapple juice along with one tablespoon of brown sugar (if you want a sweet taste). Bring mix to a boil, and then add the chicken until it is cooked thoroughly. When the meat is cooked, add some fresh pineapple and toss lightly.

If you want to kick this pineapple chicken recipe up a notch, add one cup of chicken base to the liquid mixture along with one tablespoon of corn starch. Once the mixture starts to bubble, toss in o1/2 cup of orange juice allow the sauce to become thick. Also, you can add lots of chopped veggies to this dish. Serve this chicken dish over rice or noodles for a complete meal. Really, you can add anything you want to this dish as long as you keep the liquid measurements the same.



Some people prefer to add a bit of sake to the mix, and some prefer to add soy sauce to the dish. Both of these ingredients will produce an Asian inspired dish if this is what you are aiming for.

This pineapple chicken recipe will easily become a weeknight staple in your family. Pleasing to eat and easy to make, it just doesn’t get any better than this.
