Thai Chicken Recipes

Interestingly, this dish did not come from Thailand originally, though it has become a Thai food staple. To make this dish, you will need 1 ½ chicken breast; 1 tsp. coriander; 1 tsp. cumin, 1 tsp. turmeric; 3-4 shallots sliced thin; 1 stalk lemongrass (sliced); 1 clove of garlic; 2 tsp. sugar; 20 skewers; 2 Tbsp. oil (vegetable or peanut).  Prior to making this dish, soak the skewers in warm water for twenty minutes.

Next, cut the chicken into bite sized pieces, and dry each piece with a paper towel before continuing with the recipe. Add the coriander seeds to a wok, roast for a few moments, and then add the seed to the mortar and pestle. Add all spices to the shallots, lemon grass, and garlic. Coat chicken in marinade until thoroughly covered. If you have the time, let the chicken rest for one hour or overnight. Then, simply skewer the chicken onto the sticks and grill until cooked.
